One of the friendly rounds in Scribbles recent Battle of the Best Series 7 asked what was your best breakfast food. Our Dunnville Scribbles friend Ellen told us her favourite is a breakfast "fry-up". It sounded quite yummy, so I asked her if she'd be willing to share her recipe with Scribbles. Not only did Ellen send her recipe, she also sent a series of step by step photos.
Here is Ellen's Recipe...
-While you give them a 5 minute rest to develop the allicin, put a dollop of olive oil in your pan. (Yes, olive oil is perfectly healthy to use for frying.)
-Turn on the heat.
-Sauté the onions and garlic.
-Slice the mushrooms. Add to the onions and garlic.
-Zucchini and broccoli are great additions here too.
-Add tomatoes.
-Stir things up as you go to prevent anything from getting too dark.
-Beat two eggs and add to the pan.
-Give it a tilt or two to spread the egg evenly.
-Add a teaspoon or so of herbs de Provence.
-At this point I add some spinach or kale if I have it.
-I love adding lots of feta or cheddar cheese at this point.
-I turn the temperature down to medium, cover the pan, and give it ten minutes to cook the egg and melt the cheese.
-If I have lots of moisture from tomatoes I may let it cook a bit longer to let that evaporate.
-Then I try to fold it all neatly in half but it usually ends up a marvelous delicious mess on my plate.
-An alternative is to not use eggs and cheese, just fry up all the veggies, and then stir them into a big bowl with a cup of cottage cheese. Really ugly—seriously ugly—but again, delicious!
-I don’t add salt at all because the feta or cheddar is salty enough for my taste.
