Forget groundhogs, my first sign that spring is around the corner is the appearance of my furry friend Bebee, who joined me outside on Family Day while I had my tea and enjoyed some sunshine.

RECIPE | Meatloaf by Ken Konkle

My mom’s neighbour Ken cooks up some tasty dishes, which he often shares with mom, who in turn shares with me. His meatloaf is amazing. I liked it so much I asked him for the recipe, so I could share it with you. 

INGREDIENTS:

-      1 lb lean ground beef

-      ½ package Club House Meatloaf mix

-      1 whole egg

-      ½ onion (chopped)

-      3 slices white bread

-      ½ cup ketchup

 

PREP/COOKING INSTRUCTIONS:

-      Mix ingredients together

-      Form in baking pan (leave ridge/valley around top to prevent runover)

-      Spread a tablespoon ketchup on top of formed meatloaf

-       Bake at 300 F for 90 minutes

-       Drain grease

-      Continue baking at 300 F for another hour

-      Increase heat to 350 F for one hour

-      Let stand about 30 minutes

-      Remove any grease

-      Turn upside down on plate

-      Cuts better the second day

Last Year at This Time

This photo was taken after LAST year’s birthday party for my mom.

Because of lockdown restrictions my family didn’t gather at my place. Only mom was actually here in person. The rest of my family were at their homes but still very much a part of the party.

I had made birthday kits for each person which they received a few days before the party. The kits included balloons, party hats, candies and other goodies.

We did a Zoom call and each location looked similar thanks to the stuff in their birthday kits.

When I presented mom with a colourful birthday cupcake (instead of a cake), I did it on camera so everyone could sing “happy birthday” together.

I always incorporate a game into each party. Last year’s virtual birthday was no exception. I came up with The Birthday Game. Each person had a birthday game sheet and funky pen. I asked 10 birthday related questions, everyone wrote down their answers on their game sheet. Then I revealed the answers. The person with the most correct won a gift card.

This pix is me feeling proud and content that the party was a success…. Both in person and virtually.

I read Enough Already recently, well technically Valerie Bertinelli read it to me, I opted for the audiobook on Audible.
 
I have always admired Valerie Bertinelli ever since her debut on One Day At A Time. This book gives us a behind the scenes look at her love for Eddie Van Halen and their son Wolfgang. It’s also part self help, with some of Bertinelli’s favourite recipes thrown in for good measure.

The book instantly became a New York Times #1 Best Seller.

Whether you pick an ebook, audiobook or a good ol’ actual physical book, Enough Already is a great read.



Hair's the Truth

A while ago I created a clip that showed me with a shaven head, stating that my sister gave me a major haircut.
 
While it’s true Kim did indeed cut my hair that day, the bald look was a Tik Tok filter. Some of you knew right away that my Kojak look was bogus, but several of you thought it was legit. I had intended to share this secret a few days later, but forgot.
 
Today a good friend messaged me. In her message she mentioned she liked my “new look”. Mother of god, she must be thinking I’m bald now. That’s when I realized I had not come clean about this.
 
I have nothing against the bald look and appreciate that some of you thought I looked good that way, but I still have hair.
